Welcome from France. Regarding the 'to do' list and which order, the very first thing to do is buy a JIS #2 screwdriver . The crosshead screws aren't Philips. I have 2 Vessel drivers, superb bit of kit. Maybe worth getting a JIS #2 bit for a mechanical (hit with a hammer) impact driver. Good look with the recommission.

Welcome from northeast US. I agree, your JIS drivers and an impact driver will become your best friends by the time you are done !  There is a lot of knowledge about KZ's here and the members are always willing to answer your questions and help you through your project.  Take it one step at a time and you will probably find that you enjoy the journey.

Greetings from Arizona. I did some riding in Germany before I came here. I'm sure you will find some nice roads to travel in your area.
I hope the inside of the tank is nice. Nice find you have there. Please keep us in the loop as you progress with her. We love pics.
I don't have a plan and I'm sticken' to it! '77 KZ 650 / 750 GPz custom project in progress

Here is a good European source of original factory parts.

A genuine factory service manual will be invaluable. You may find one here.
