Welcome from France. Regarding the 'to do' list and which order, the very first thing to do is buy a JIS #2 screwdriver . The crosshead screws aren't Philips. I have 2 Vessel drivers, superb bit of kit. Maybe worth getting a JIS #2 bit for a mechanical (hit with a hammer) impact driver. Good look with the recommission.

Welcome from northeast US. I agree, your JIS drivers and an impact driver will become your best friends by the time you are done !  There is a lot of knowledge about KZ's here and the members are always willing to answer your questions and help you through your project.  Take it one step at a time and you will probably find that you enjoy the journey.

So I really need  someone in Europe if there is any one in Europe that has seals o rings and gaskets then please can they get in touch I would like advice everyone in my work (and they know bikes and motors)says just crank it but I am a bit unsure of what to do . Oil change first obviously  but I don't  know  if it works it works bit it sat for 10 years. 
I fixed most of the chrome and lenker plugs the packauftrage
