I have a 1980 Kawasaki KZ750 Ltd. I bought new. I recently managed to get it out of my garage after 28 years and put it on the road again (2010). I feel like a kid all over again. Since I have acquired 3 78 KZ1000 Ltd, 1 1981 KZ1000 Ltd, and another 1980 KZ750 Ltd. Love the LTD's.

Likely have to check several models before finding the one with VIN or Engine number range that includes the numbers on hand.
It's not unusual to discover that a bike at hand has had its original engine replaced with an engine from a different year model.

I think you got the frame number slightly wrong,, there should be 00 before the A

The wheels, brakes and swing arm could be from a 77 LTD like this

Is the front wheel an 18" or a 19" diameter? The front disks have the hole pattern from a 1978 Z1R. If the front wheel is an 18", the wheel and disks are likely from a Z1R.

Carbs are CV's and are wrong also the pods will make it run like a dog, original carbs would have been Mikuni 26mm's, your air box is missing and they are as rare as rocking horse sh*t.
grab rail is ltd as is the seat, wrong handle bars as well.
The one piece of advice i can give is get a proper airbox for those carbs probably a csr 1000 one will fit or go back to 26mm mikunis with correct airbox not cheap but worth it, look at paying a couple of hundred for the air box and 250 for the carbs Pound notes that is.
drilled disc are fine, in fact an improvement on the originals, these are nearly useless as opposed to originals which were/are useless.
As you are in the UK it would be worth joining the Z1 owners club forum, pretty helpful bunch, some use this site as well.
