Time to build something I don't run into rocks

Hey y'all I am building a 78 Kz750 that my brother gave to me for free
. I have a background in custom fabrication for Jeep rock crawlers. Ive built some pretty extreme stuff in my past and have basically full metal fab shop built in my garage. I also have a buddy that's been building-racing bikes for over ten years so between the two of us we should be able to make a sweet budget modern looking cafe racer.

We are going to probably use a harley vrod headlight and lower it so the top is flush with the tank. Already stripped the instrument cluster and probably gonna just run a small tach w/ mpg. We are toying around with the idea of monoshock. Went to a 40 tooth sprocket in the rear. And got the whole rear wheel cleaned up.
and put on 2 little intake filters

Well, you've certainly set the bar pretty high for yourself

I have been doing pretty serious metal fabrication for the last five years
I hand build almost every piece of my suspension components.
And have acquired bout $10-12k in fabrication tools. So I'm thinking with my buddies knowledge and my fab skills it should be do able super cheap.
And yes new rubber is definately on the list.
