The original plan is make this into a cafe racer. After getting the bike home it is almost too nice of shape for me to strip it down, change front forks and this and that. I might feel bad doing that. I may just go back to stock get rid of that seat, highway bars and sissy bar. Then sell and get another that i wouldn't feel bad about modifying.
AS of right now cafe racer unless I start to feel guilty. The only scratch in the paint is on the right side panel and would be easy to fix.

That bike is clearly in too nice of shape to change from stock. It's your bike to do with as you please, but I respectfully suggest you clean it up, sell it at a profit, and use part of that $$ to buy a bike that's not so pretty since you will be changing its appearance anyway and use the $$ left over to pay for the mods. The plan after spending some time looking at it is to get it running, get some new tires and ride it. Get it back to stock and see what I think. Who knows may love it the way it is. Yes the bars and seat need to go. Lol

Sounds like a plan. You may like it enough to keep it as a cruiser/tourer and add another one to build. I know my own old stock KZ650 is growing on me more and more, although I only have 600 miles or so on it. The way it's constructed and the overall quality is simply magnificent! OK, adjusting the valves isn't the most pleasant of tasks, and getting carbs on and off is something I do not look forward to. But apart from that, this bike is generally simpler to work on and more geniously designed than a Honda CB100. And it's very relaxing to ride, cruises like a Vulcan yet is nimble as a 400cc commuter.

Bravo
and welcome to the forum.
Too many messed up crap condition bikes out there to make very cool cafe's, bobbers, ratters etc to chop up a clean one.
IF you want a cafe, get that one running, sell it, use the proceeds buy basket case and the additional costs of fabrication parts etc.
