I am ready to order the tires for the 78 KZ build. It has ZRX front and rear so what size tires should I use? I was thinking about a 190 for rear and 120 front. Any opinions would be appreciated.

If you have a 1200 wheel and swingarm, and you did not have to machine the wheel or carrier to get proper chain alignment, you can run a 190, but handling will not be ideal.

If you have an 1100 wheel and swingarm, the 190 will be distorted enough to affect wear and handling, and you may run into clearance problems, depending on the specific tire. 

Either way, a wider tire is going to slow turn in a bit. The stock sizes work best.
