Hi just respoked my rusted out 18 inch spoked disc braked rear wheel and I don't know the wheel offset which I believe is measured from the disc mounting face to the rim outer , on my triumph back in the past never bothered as it was slow but now the Zed is a bit quicker Please any advice I tried to buy a gen kawsaker shop manual kz1000A no luck

I don't believe there is any offset.  Simply install the wheel with the spacers shown in this Partzilla diagram.  Note items 4 and 24.  You want to ensure your chain is lined up, with no visible warp or bend when you look down the chain from the rear.

I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

I don't know if the offset is to centre the wheel in the rear forks hence inline with the front or because of the loading on the two different lengths spokes

Sam, What are you talking about when you say "offset " ?
The rim should be laced centred, to the centre of the hub, there is NO offset from the centre of the rim to the centre of the hub. The stock spacers will put the wheel in the correct position. 
There are some very experienced UK members both here and on the Z1 owners forum, of which you are a member , find one that's close and get some help, sometimes its easier to be shown than try and explain on the internet....
