Spot rust on front fork tubes, and rear shocks on kz650

On my new project forks have spot rust from sitting. I was wondering if it's a replacement item? Or can be polished/restored somehow?
It is not close to boot, maybe 4 in above, so I doubt it will interfere with seals.
Question, when I rebuild fork, what can be done to better fit me? (220lb) I'd like to do it once.

Another question on rear shocks. Are those adjustable? Do they need replacement and what is the "go to" replacement?
I see full chrome one on sale at Z1. But not sure if it's an item that need to be replaced and if those are rider specific. If I buy new, I'd like to know they will work for me (220lb) rider.
