Could be fuel, spark, or air.
Tape up half of your airbox opening.
Does the #2 cylinder run better?
Take the tape off and slightly open the airbox.
Notice any difference in how #2 is running?

I replaced the air box with pods a long time ago so I took the 1 and 2 pods off and covered 1/2 the #2 intake with duct tape and the sputtering went away. Idle mixture screw needs adjustment?

well, it's an intake issue.
It could be:
-your spark is weak and need a richer mixture to fire(ignition issue affecting only that cylinder)
-your carb is too lean(idle mixture may need to be adjusted as you mentioned)
-air leak

Try the mixture screw first as it's easiest then progress to harder items.

I was able to richen the mixture with the idle mixture screw and got the #2 idling nicely without any pops. I took her on the road and it was still popping at speed. Came home and put the tape back on the intake. Took her back on the road and she purred like a cat without a single miss. Not sure what to do next besides leave the tape on the intake and be happy that she runs nicely like that.

I’d fix the problem. For some reason #2 is lean. Leaving the tape is a bandaid. It’s either an air leak or a plugged pilot jet. You’ll feel better knowing you fixed it.

Mikaw, I know it's a band-aid but I don't relish taking that carb apart.  I think I'll replace the masking tape with tin foil and live with it for awhile knowing she purrs that way. I might change my mind later.  I just want to ride her while it's still summer.
