I just rebuilt my carbs and when I started the bike, it ran but when I turn the choke off, the bike dies. I first ran the bike with no problem for 10mins. After it died the 3rd time, it doesn't run at idle with or without the choke. Do you think it's the pilot jet?

Randall, Please read the stickied posts at the top of the page. One of the things we ask is that folks put their bike year/model and location in their signature and I think you can find tips for doing that.

Without any idea what type carburetor or carburetors are being asked about, there is no hope for any good answer. Sorry.

I would check for air leaks. Did you get carbs on square and tight? What do manifold boots look like (no cracks, etc.)? It did run with choke on and died when choke was taken off. Sounds like too much air.
