Which carbs on this? I'm not good with carbs, so I need some recommendations from you pros :)

1979 KZ650 with MTC Engineering KZ780cc Big Bore Kit and GPz750 cams. Port and Polish will be done propr to assembly obviously, and I will be running a 4-1 exhaust.

Now... which size carbs would a guy really want?

I run 29mm smoothbores on my 700cc 650 w/ Web-Cams. It made 80HP at the wheels on the dyno!

go with the 28's. easier to find, cheaper, and they are less finicky than the 29's!:)

I personally run and love my smootbores but...just a shot in the dark here, but what is your opinions on maybe a set of CV carbs off a newer bike? Not sure of what sizes are available. I've seen them on stock to modified KZ's and they seem to run good. Any opinions?

1980 LTD (changed over the years), 1979 LTD (being rebuilt), 1977 KZ turbo and various KZ's in various states of build. KLX110
