The piston came out fine using the master.
I'll start looking for a disc.

The parts book lists a shim behind disc pad A.
my caliper does not have one, is this shim only there if needed?

That is an anti-squeal shim.  It looks like there are some on eBay.
One issue is that the pads need to have two posts on the back to hold the shim.  Many aftermarket pads don't have the posts.
For example, the SBS pads I bought recently did not have the posts.

Book Em' Danno! Nice work you do! Glass bead is great for the caliper parts. Just a note, Are you aware of the 2 socket head bolts that hold caliper together are early only? With the star looking blanchard machining marks inside the opening? If you have your hardware zinc plated? Make sure some kid don't grind them out, thinking he's cleaning them up for you.
I am not sure about Brake Crafters making a Z1 rebuild kit? But I have purchased 3 for the 76 calipers with SS pistons. Great Product as others here have used also. Don't trust a pitted piston. I also have been using 304 stainless brake line and fittings. I sold these cores cheap a few months ago.

Yep, my bolts are the old type with the detail inside the head. They now have bad chrome on them for some reason, I'm deciding what to do about them.

You can have the chrome removed and then zinc plate them.

I was debating on using the case guards that were on my bike, but the chrome was bad.  I tried to find a company that could strip the chrome off so I could have them powder coated.  I could not find any company that could strip it - only replate it if it was already removed.  Apparently the chemicals required to strip off existing chrome plating is much nastier that the chemicals required to put it on.  I came up empty handed in my search for a chrome stripper.  Takes forever in a blast cabinet - chrome is pretty hard stuff!  If anyone ends up knowing or finding somewhere to strip chrome, please speak up!

And what is left is a toxic solution containing chromium - a hazardous substance.  Very difficult to get rid of legally.  Thus wanting to search for a company that can deal with such disposals.  I would rather pay someone else to take that headache out of my hands.

I bought a used set of engine guards for my KZ-1000 from Redline Cycle in Illinois.  They weren't cheap but they were the only thing I could find that was in almost perfect shape.  They were re-chromed by some unknown entity thru Redline.  You may want to give them a call and see if they will tell you who they had/have do their re-chroming.  They were very well done.  There is also a motorcycle restoration shop in Belgium, WI called Retro Speed, 1-262-483-5399.  They do some really nice restoration work and I am sure they have items re-chromed.  They may have a line on someone who can do this type of work also.  Hope this helps...
