Is there a reason for doing this project? seems kinda strange to me. especially lacking any mechanical skills or a place to work. to each his own I suppose.

Minor problems. Most items are bolt on. Just place the timing mark on the 1-4 mark before disassembly and reassembly. Use a torque wrench( I have 3 different sizes for my bikes) and feeler gauges . If he watches the videos and has a service manual, plus a haynes or clymer manual(the factory manual has confused a few people ), the rest is just how bad he wants to do it and time. Piston ring compressors can be bought or made and the same with valve spring compressors.

Installed new baffle then rejetted for open exhaust? lol

IMO, if you own a vintage bike, even more a customized one, you NEED to be able to wrench on it or have deep pockets.

Honestly, based on the way I read you issues, it sounds to me like your carbs were just jetted incorrectly.
