Hello, My name is Ron. I just bought a 1977 kz750B, it has just under 8K miles on it. I will need to lower it some as I am only 5'6". This will be my 7th bike restoration. I have owned a triumph 650 bonneville, 2- Honda cb750's, Honda cb360t, Yamaha 750 virago, Yamaha xs650 special, Honda v30 magna, Buell blast, Harley sportster, Kawasaki voyager 12, victory v92C, can-am spyder rtl.

I have been riding for 54 years. Only been down twice. Once making a left turn after a light rain, (rookie mistake), I was in the middle of the road and the rear slid out on me. My pride was hurt, that's all. and once when a passenger leaned the wrong way in a turn and I ran off the road into a field. Both times in the mid to late 70's.

The information I'm looking for is the following at the moment.

1. I know I can lower the forks an inch but has anyone taken out the spacer to make a difference
2. Has anyone made or know of any lowering brackets for the rear shocks
3. Has anyone installed smaller rims on the bike and if so, from what bike
4. Has anyone replace the rear tire with a 110/80/18 and what difference did it make
5. Has anyone installed 11" rear shocks

I see you're from Sykesville. I grew up in Hyattsville, Ripped my way through all those roads in the day.

Howdy.  I haven't done any of the things you're asking about. my disclaimer. hee.

For the rear you can probably go with Vulcan 500 shocks. 
Someone here on KZR reported that they installed them on a KZ550, so they'll probably work on a 750 Twin. guessing.
Before buying, verify the eye-to-eye length as all of them may not be 11". since the EN500 had a long model run.
Another option is HD Sportster huggers, but these may rub the chain guard.  shouldn't be a problem w a plastic chain guard, though.

For lowering the front.  You might be able to slide the fork tubes up at the triple tree, but probably not by much.
The spacer can be cut or replaced with something shorter, perhaps with 3/4" pvc couplings or females. or 1" OD aluminum tubing. 
New shorter fork springs could be installed.

Thanks Martin, I'll make note of that and look into it. It will probably take me a year or so the complete, so I'll on the board quite often or as need be
