To speed things up you can use some aircraft paint stripper. It loosens up the paint and once dry the blaster finishes the job. Just don't get it on stuff you don't want to repaint.
That gallon jug in the picture is industrial paint stripper. It's working well.

These foot pegs look ok, if they fit properly. It seems the floorboards are one of the more difficult things to eliminate. All in all, I think you are on the right track. from what I see you ordering with the carb kits and rubber carb holders etc, The bike should respond nicely.
I have the Dlekevic exhaust on my bike, and it sounds pretty knarly. lol
There is a 82 Kz1000P for sale on this site, located in western mo. Check this one out. I think it looks pretty nice.
