Long story short, I'm looking into upgrading to a Dyna-S ignition. 

I intend to run the green 3ohm Dyna coils.

I'm assuming I need 7mm plug wires? Any recommendations?

My question is, which plug caps do I need? I know I want 90⁰ plug caps. I also want to be able to run BR8ES plugs, as the B8ES plugs are no longer being made, and are getting harder to find.

Last year I switched to Dyna S and green coils on my KZ1000.  It allowed me to eliminate the exciter and wire the coils direct from the pickup.  I used 7 mm silicon plug wires.  I think the plugs come with the wires.  At least two of them are already hooked on.  I have two long straight ones and two with a slight bend.
I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

The non resister solid copper core 7mm Dyna plug wires (currently) and several other brands over the years have always done me good w/ Dyna S and green coils.

I use straight caps (slightly curved end) (already installed on Dyna wires) but 90 deg caps are avaliable I think. Z-1 has em or maybe ebay. Would want non resister caps to go with the res plugs of course.

Just an fyi.  You could buy bulk spark plug wire & if need be reuse the outer sheathing from the stock plug wires. credit to Nessism.  Silicone spray would probably help the sheathing slide along the plug wires.

Follow up question: if I upgrade to the Dyna-S, can this be done in stages and run the factory coils for now, or does it all need be done at once?

I've been using the Dyna-S with the factory coils for years on my kz1000, and I did the same in my kz650.  As long as the coils are above 3 ohms and in good working condition, I don't see a reason to replace them.  I wanted to get rid of my points, that's all.  And I haven't needed to touch the dyna-s since I installed it.

I used dyna coils on one bike, prone to arcing and cracking, i have stayed with stock coils since with no discernible difference, so save your money, make sure you use non resistor caps with BR8ES plugs

If your factory coils are 3 or 4 ohm then you should be able to install the Dyna S pickup.  I would recommend you look for the spare double female brown hot wire near your headlight and use it for your power source.  The clip supplied with the Dyna S system is a piece of crap.

I’m going to try these on my next build. I’ve seen pictures of bikes with them so I’m sure the 8mm will work. I will use non resistor plugs

Don’t mean to hijack your thread, but I’ve got a 77 kz650 and I’m also looking to upgrade to Dyna DS2-2 elec ignition. I’d like to tear the coils before j go ahead and buy the Dyna greens. I don’t have a bench coil tester. Other than testing for ohms range and “garage arching” test. Any other tests I could perform??

Also read that if I go with the greens I should insulate the coils posts. Would I just wrap the exposed metal sections with rubber wire insulation and or electrical tape ??

Yes, the green coils are not a good design for these bikes and will arc from the wire connecting screw to the metal spacer which the coil mounting bolt goes through.  Some people replace the two front metal spacers with home made plastic ones which is what I'll eventually do. Temporarily I've used some of that electrical shrink wrap stuff over the spacers, cheap and simple and haven't had any arcing problems so far.

what length m6 bolts do I need for the coils posts. Also assuming I’ll need nylon locking nuts for vibration
