I know my bike can take it, but cruising the freeway at 75 or 80, it sounds like a swarm of hornets.
The speed limit in America was 55 mph when my '76 was new. I think just about all of the KZs were sold during the dark years of the 'double nickle'. Some even have a speedo that only goes to 80.

My 750s' speedos only go to 80...bounce, bounce, bounce!!!

You shaftie riders just have to go to a larger wheel and tire!

On my SR I went with the stock sized 16T and 102 link chain, but put a 38T on the rear. It runs fine, but that combo puts the axle near the rear end of the adjustment. When I run out of adjustment, I'll have to try removing links or back to different sprockets.

On the two most recent projects, I went with a 17T on the front and I like that better as the axle is now near the front of the slot. I can't tell much difference in RPM between my SR and the 650B at highway speed.

Murphys corollary: Wrenching is the result of time spent riding.
