anyone know what I need to order for bearings to do this conversion? Triples are being machined sometime within the next week, because my machinist picked them up today.

If the stem is long enough then you can go to All Balls site and look at the steering bearings conversion. You type in the make, model, year, of the frame and it will tell you what bearing to use for what front end. Easier to use than describe

No eBay APP ID and/or Cert ID defined in Kunena configurationI am swapping the stem, so does that mean I just replace them with a new set of stock kz1000 bearings?

Yup. Stock Kz stem + stock Kz frame = stock replacement bearings.

curious if I could get a zx750-e swingarm on my kz750-h1. I know there is a conversion bearing kit for the forks available.

Swing arm will bolt in, and you better take a look at those conversion bearings, I think they both use the same bearings. Put a ZX750A swing arm and forks on a 79 KZ650SR a few years ago, modified the arm to run dual shock.
I don't recommend the ZX750A or E forks, no advantage to them compared to your stock forks.
