Well everyone, I officially have every part to swap from spoke wheels/drum brakes.
If you're wanting to do this swap, best thing to do is find a parts bike with all the parts you need.
Hunting on Ebay for individual parts is a time consuming, money wasting nightmare.
But, everyone I find are real proud of their old KZ's and want upwards of 1k for them.
