You have one other option not mentioned: you say you like the lower ratio given by going from 39 to 41 on the back: you could get almost the same ratio by using the stock 39T rear and drop one gear on the front. If your front is 16T like most, drop to 15. The ratios would be:

NOW 41/16 = 2.5625

39/15 = 2.6000

The difference in ratios is only about 1.4% which is microscopic. The upside is you could use the stock chain and only be off about 1/4 link (which is about 0.18" ) at the rear axle compared to stock location. That should give full adjustment range in both directions.

Another upside to using the stock rear sprocket is price: you can get steel stock rear sizes for most bikes cheap. I think the one for mine was $24 at Z1. Non-standard sprockets are usually expensive because they don't make as many of them. The 15T front sprockets are cheap like $13.
