I did some measuring, here is what I found:
Plugs: NGK B8ES (non resistor I believe?)
Plug caps: NGK 5kOhm resistance (the ones from Z1enterprises)
Coils: EMGO, look relatively new to me
Voltage Battery, ignition off 12.68, Battery is 2 months old
Voltage Battery, Ignition on with headlights on: 12.37
Voltage at coils with headlights on: 11.5
Patton, I did the plug chop at mid-throttle and WOT multiple times when dialing in the carbs. Plugs look perfect to me, slightly tan, so I am pretty sure I am not running too rich if that is what you suggest.
I also just tested the spark, looks good to me on all plugs, pretty strong.
Fuel starving just came to my mind as another possible problem. All my floats are set correctly (checked with clear tube), but what if the flow out of the tank is not enough? I have a newish Pingel petcock, but is there a way to check flow, like "should be a pint per minute" or whatever? Again, thanks for y'alls help!

if your fuel has Alcohol in it, the gas may be causing the lines to internally swell, reducing flow, acting like a lean condition. It will also attack the gas filter if you have one, coating the filter element with dissolved glue from the paper medium, and softening the fittings on the plastic filter's body.

Could be, who knows? I think just to rule that out I will run a new line without filters and check it out.

I ran the bike and voltage at the coils is all over the place (ranging from 0-13V) When I shut the engine off, voltage is around 12.7V. Could that be my problem? (Sorry couldn't figure out how to upload the video)

20 Oct 2014 13:03That sounds bizarre, it can't run with voltage that lower end. Is it a digital meter? I'm not totally sure but I dont think it's valid to measure voltage at the coils when the engine is running because the voltage is on/off as the points open and close and the coil field colappses and then gets going again

Yes it's a digital meter.
What if I just ran power directly from the battery to the coils and tested it that way? I know my battery is good, and it shouldn't be a problem to ride around a few miles with the charging system disconnected I believe. (Ok, I know I will be cooking my coils if I leave power on there when I am stopping so need quickly disconnect
)
