Search ebbaayy for KZ750 Shaft Manual - there are plenty of them. The ones I've seen have a Spectre on the front cover. Kawasaki factory manuals have a model application chart on the back cover - some sellers include a photo of the chart.

Do I need to remove the shims and measure them to determine what size I need on the new ones?

Make a drawing and measure all the clearances before you take it apart, record them. Then measure each shim as you take it out (keep them in order) and write that down on the drawing. that tells you what shims you will need by subtracting.
NOTE: if yours is shim-over-bucket you can get a tool and take the shims out only at the ones that need adjusting. If it's shim under bucket, the cams have to come out then take off the buckets at the locations that need adjusting. Keep the buckets and shims in order, measure the shims and calculate the one you ned.
