Exactly the same method I use. Trace and cut. Punch the holes. (I think I punch the holes first.)

Order them if you can, but if you need it right now, have a roll of material handy. There are rolls big enough for valve covers, but not every parts store will have it that size.

Some places matter on thickness. Other don't. The valve cover gasket thickness will very slightly alter intake cam timing.

Some ignition covers have tighter clearnaces than others. SOme of the 650 ignition covers will nearly touch the rotor/advancer, (at least when used on a 550). So a thick gasket will help there.

I'm not sure about the alternator cover or clutch cover.

On mine, the oil pump gasket is critical. Small variation in clearance affects pump pressure.
