the main reason to use the copper head gasket is it's reusable, most times a copper gas is used is in motors that have high cylinder pressures [high compression or turbo motors] the cylinders should be o-ringed. motors that are bigger than 1105 are usally equipped with copper head gaskets, if you are tearing down your top-end from time to time[changing valve springs or piston rings that kind its nice to have reusable gaskets] you can get copper gaskets to seal but usally you have a tough time keeping them from weeping. on a bike as nice as yours i'd stick with stock type fiber gaskets just because they seal up alot better.
