I just ran across your bike, Great Project! I just picked up a 1981 KZ750LTD for $150, couldn't resist it, even though I was wanting the standard. I am doing a cafe racer as well and I am loving looking at what you are doing. As far as I can tell, the frame has a step down, the forks are leading axle and the rear wheel is smaller. All to get the cruiser look. I am not sure about what the handling will be like either. What with you dropping you fork tube heights, that normally speeds up the turn in or steering. I am thinking of changing out the forks and mounting the bigger rear wheel. Kind of a lot, but for what I have in the bike, I don't think it's to much. Looking forward to seeing what you do next.
