In your opinion do I need to install all of the stock parts that I m collecting? Can I just offer those along with the bike? Put on the seat and leave the fender, air boxes and pipes separate?

It seems like craigslist would make a bit more sense here. The CL post would be seen primarily by local people so you wouldn't get random queries from places like Russia, and it would allow you to leave the shipping out of the discussion. Buyer pick-up would be the only option, unless you felt like delivering.
