I bought a used seat for a J model. Used a old seat pan I had and made my own.

All I know is the later J model seat is stepped and the early are flat. I could stretch the cover to fit my early pan but it wouldn't work the other way.

Is this a fairly cut and dry type thing to do or is it best left up to the upholstery shop?

I had mine recovered as well last year. Not only was mine ripped and covered in elect tape but the padding was shot. My new cover came w/ more padding stitched into the cover. I got mine off of ebay as well. From the seller you linked. Good quality, marine-grade vinyl. It is not a replica but it does fit and function as I want. Replicas might be copyright infringement plus exact copies do not have padding stitched-in. My stock saddle had faux stitching and the seat pan foam was the only padding which was getting very worn out.

I opted to have mine installed by a an upholsterer in my area. He charged me an hour labor but did it exactly right using the existing alligator teeth and fit it perfectly

Old seat. You can see the gorilla tape separating on the sides.:

another pic showing the tape on the old stock saddle:

New seat cover w/ foam-filled pleats which is a vast improvement in riding comfort:
