Does anyone have any idea where I can find some extended throttle and clutch cables? I'm gonna be running 15in Ape hangers on my 1981 750 LTD and so far have not had any luck finding any.

You'll probably have to get them custom made. Barnett or Motion Pro are a couple of places. of the two most folks would probably say to get the Barnett cables.

You'll need to figure out the max length of the inner cable & the amount of slack or end-to-end movement. I would use clear tubing, perhaps short sections taped to the ends of the current cables, route them where they seem right, tape 'em in place, then move the handlebars side to side to make sure they're right. then figure out the needed length.
